Havn't had the time to bake much lately since I came back from my Melbourne trip. Fathers' Day is coming soon, I'm thinking a cake is in order. Now, to decide between the Dad's perennial favourites -mango, or rum and raisin?

New York Styled Cheesecake with Cherry Topping
I made a cheesecake a while back. I had plans to surprise a girlfriend with desserts, and I knew that she likes cheesecake. It's been a while since I last made a cheesecake, and I don't normally make them since the family don't really take to cheesecake well.
I decided on a classic New York styled cheesecake, and since cherries were in season back then, I found a recipe for a cherry topping to top the rich concoction.

Cherry galette with almond cream

Roasted cherries tartelettes with Oreo crust and chocolate ganache filling
Cherries were in season. I couldn't get enough of them. In all, I bought about a kilo (and more) of cherries in the last month. Whenever I happened to walk by the supermart, I'm bound to pop in to check whether cherries were available and whether they were on sale.

Banana nectarine cherry popsicles
Minimalising usage of the oven is really quite easy on hot and humid summer days. Slurping cold (that's actually stating the obvious cos since when is it hot anyway?) ice cream and taking cold showers, both of which are little pleasures of life.
Instead of gorging on creamy ice cream, I thought that refreshing popsicles should do the trick. I was keen to play more with the popsicle mold that I had just gotten, and after my first attempt at making popsicles, I was all set for further experiments.

Chocolate cherry coconut almond granola
As I mentioned in my last granola post, I like having granola for breakfast. I mean, it's oats, and oats are supposedly good for the body isn't it?
What I have here today, is admittedly, not a healthy granola, but heck, we should all ease up a little bit, enjoy a little treat now and then (okay, almost all the time...) and just hit the gym more often to make up for the sinful stuff we consume...
Anyway, the granola I'm talking about is no other than this chocolate cherry coconut almond granola. Yeps, that's certainly a mouthful to say. You can always refer to it as the chocolate granola, ah then again, who cares what you call it, when everyone is more concerned with other pressing issues - such as fighting for the last bowl of it.

Cherry coconut bakewell tarts
I had leftover cherry compote from here, and wanted to finish it up. I decided to use it in a tart crust recipe that I wanted to try out. The Sister (and I) has always been in love with Delifrance's fruit tarts crusty crusts. And everytime I bake fruit tarts, she's bound to compare it to the Delifrance's version. So I decided to Google for "Delifrance tart crust recipe". While I didn't found the exact version, I found one that the blogger said tasted similar to Delifrance.

Black forest macarons
I had extra egg whites and just a little smidgen of cream leftover from a 1L bottle in the fridge. I hate waste. So I put my brain to good use, and the first thing that came to mind was - ding ding ding, macarons. But what flavour macarons should I make? Tough choice. I had a whole list of potential flavours I wanted to try out. Somehow, I have no idea how, black forest came into mind. I don't really fancy anything black forest-y and it wasn't even on my list of flavours to make! Yet, we had just gone to the wholesale vegetables and fruits place recently and got ourselves lots of fresh fruits - a big box of peaches (20 of 'em!), 4 punnets of strawberries and a 2kg bag of huge-ass cherries. Ah. Cherries. Succulent juicy red cherries that dribble juice down your chin when you bite into the huge red orbs. Black forest macarons it shall be then.

Cherry crisps and a new book
It's cherries season now. Hooray for that. I simply love popping those bright chirpy looking fruits into my mouth. The taste of exploding cherry juice on your tongue - priceless. Pity about the pits though. Someone should just cultivate seedless cherries already...(think seedless grapes). ;)
