Blueberry Coconut Lime Brown Butter Muffins

Okay...It's a new year, I'm slowly (but surely) plodding my way through the mountain of backlog I had accumulated. I've at least edited photos for three other posts! See? Baby steps. It seems too soon to start talking about New Year reflections (given that my reflections post for the previous year was like what, a half year ago?), so I'll skip that bit first and jump straight to the goodies.

Five-Bananas Banana Blueberry Bread

You might find me updating the blog every other day for the next few days. No reason other than I finally decided to kick (some of the) dust off my idle hands and stop being the master procrastinator I am by editing some of the photos I have on hand. You have no idea how it scared me when I slotted my camera memory card into the laptop recently and found that it had over 2000 new photos. And that's so not including my travels 2014 photos  and various other photos  which I've already transfered onto my laptop. -insert awestruck face- That's like bringing procrastination to a whole new level by itself hey.

Brunch: Blueberry Brie Bake

It's been some time since I posted about our homemade family brunches. I have a few backlogs to go, but here's one of the brunches we had three months ago in April (yes, I went back to track the date through Instagram...).

Blueberry Streusel Cake

I've been meaning to make these for the longest time ever since I saw the post. My freezer always has a long-standing box of fresh blueberries that I've prepped and froze for future uses. I decided to make this finally and all I can think is - Why did I wait so long?

Meyer Lemon Blueberry Cream Cake

Ever since I started blogging primarily about food, I've always had a huge interest in food ingredients. One of the things that I've seen before (on many food blogs) was Meyer lemons, which is a cross breed between a regular lemon and a mandarin orange. It was reputedly sweeter than regular lemons, with a much aromatic smell and taste than regular lemons. I wanted it. Yet, I've never seen it before on local shores.

That was until I saw a local food blogger upload pictures of it on Instagram. Want. Much. Need. Now. Many thanks to Pick Yin, I managed to procure a bag of those bright golden orange orbs. Swoon.

Lemon Blueberry Poppyseed Belgian Waffles

One of my girlfriend came back from her vacation in Aussie and gifted me with a bag of poppyseeds! It's not found locally, so I was quite excited with the possibilities. The first thought that came into mind was naturally lemon. I've always seen the two flavours complementing each other just like milk and cookies, honey and tea or coffee and cake.

And since now that I have a spiffy waffle machine and all, I decided to make some lemon poppyseed waffles for breakfast. And because I know for sure a threesome (flavour) party is the way to go, I threw in blueberries into the mix as well.

Earl Grey Custard Berries Tart

It's the prettiest thing I've made so far. Then again, with the abundance of berries in it, it is no wonder why I termed it as so isn't it?

Three blueberry recipes

I've a couple of blueberry recipes for you guys today! It was blueberry season a while back as you might recall me saying earlier on where I posted about the blueberry orange scones here.

I made quite a few blueberry items using fresh blueberries and I've compiled all of them into one blueberry post.

Blueberry orange scones

I got my new iPhone 4S recently! And may I just say that I love it! One primary reason being that I get to play with all the photography apps - especially Instagram and 美图秀秀. Oh, and it keeps me entertained too as I can check my mail, Facebook, tweet and play games. Let's just hope my iPhone 4S and I will have a happy ending, unlike my previous iPhone 3...

Anyway, it's Christmas (soon anyway). Have been receiving lots of love from the colleagues at work and my friends whom I doing gift exchanging with. I guess it's the season of giving! I must confess, I'm a very last minute shopper, I was still doing last minute shopping yesterday...battling with the crowds is no fun, so I should probably not procrastinate next year!

I baked some blueberry orange scones a few weeks back when blueberries were in season. I bought blueberries non-stop during then. Whenever I pass by a grocery store, regardless of the fact that there should be at least four punnets at home already, I'll still buy one (or two) more...I'm such a hoarder.

Brown butter blueberry lemon muffins

My stash of muffins in the freezer were running a little short. I had to bake a new batch to replace the space so that I'll always have ready-to-go muffins for the just in case moments.

Berry yogurt popsicles

The weather's been pretty mad hot lately isn't it? I've already moved into my new place officially (though there are still boxes and bags of stuff still unpacked and lying around generally being a huge eyesore...), and since the oven is not yet set up, the first thing I've made here during the past weekend is some chilly treats to beat the annoying heat.

Vanilla bean ice cream, browned buttered peaches and a berry sauce

I bought a litre of cream before the big move. Should I say it was a big mistake on my part?

I should have known that there was no oven facilities at the temporary rented place, and my ice cream maker was packed away in some box that was moved to the new place. So, how in the world was I going to use cream that was due to expire within one week? I've come up with some ideas on how to use up cream. The first thought I had was ice cream. Hand churned of course since the ice cream maker was playing hide and seek.

Blueberry vanilla chocolate entremet

I had a whole big box of frozen blueberries in the freezer that I had painstakingly prep and froze the last time blueberries were in season. I needed to clear the freezer, so I decided that I shall save them for using in an entremet. I researched for recipes, and finally found one from my scanned copy of "頂級法式時尚甜點" - Jennifer aux Myrtilles - a blueberry vanilla chocolate entremet. The only thing was - I needed a valid excuse/special occasion to make the cake.

Blueberry coconut and chocolate hazelnut financiers

Around the same time I made the icecreams (yes, plural, I still have images of vanilla bean icecream to upload, that's for another post), I had lots and lots of leftover egg whites. I didn't feel like making macarons, but I was meeting some friends that week, so I decided to make some financiers to share. I used the same recipe for the raspberry financiers I made previously, tweaked it around a little, and came up with two new flavours - chocolate hazelnut and blueberry coconut.

Banana blueberry muffins

I'm currently sprouting a muffins addiction (which is a really really bad habit since it's carbs!) but I try my best, substituting plain ol' flour with oats flour (which basically refers to the throwing of rolled oats into the food processor). First up on the muffins list is these blueberry banana muffins. I think they're pretty yums, but wait till you see the next entry - the pear banana walnuts combo. Which are, in my opinion, even better than these blueberry babies.

Cutie pie niece and nephew who came over for a visit when I was i the midst of baking these muffins.
Adorable-y cute. (:

Finishing up used bits.

Everyone likes to start their day differently. My sister likes to start it off with some focaccia bread. I, on the other hand, am perfectly fine with eating cold cereal for breakfast. Not to say that I don't like focaccia, I do, just that I cannot eat it for consecutive days without getting a bit tired of the same fare.

Sister made me bake lots of foccacia so that she can eat roughly twice the portion she eat if eating store-bought foccacia. The store-bought loaf is roughly equivalent to four servings. One portion of the recipe yields two loaves. She made me do two portions. We had four loaves of bread in the house. In the end, she didn't even manage to finish all before the bread went moldy. Sigh. Sis, ah, Sis.

I made fruit tarts the other day just because I realised I havn't had the opportunity to make them in Singapore yet. To play safe, I reused the recipe I made the other time round, just makin additions to the dough by adding chopped pistachios. The taste was somewhat similar to the first time I made (sans nuts). But nuts seem to be a healthier addition so, I'll add them again next time, just that I'll chop them up finely cos this time round, there were a few chunks of pistachio visible in the dough...

As usual, my refrigerator was chock full of fruits. In addition to the grapes and mandarins we already have in stock, I got some blueberries and raspberries (a treat, considering their price!) as what is a tart without berries?

I love fruits. Especially berries. The reason being because they are expensive. As it is hard to obtain these fruits cheaply, whenever I actually get to eat them, I actually feel happy. Laugh at me if you must, but I get a cheap thrill just biting into a raspberry. It tastes especially sweeter somehow. ;)

It was a chore to segment mandarins. It didn't help that the mandarins used for the fruit tarts were of the mini variety. Big fingers need not apply.

I made six medium sized tarts and decorated them with a single fruit for each. The mandarin tart as you can see, consists of my hard work (segmenting...) so of cos, who best to eat it then yours truely. (:

I had a gathering with my girls two days ago. I had a pack of cream cheese left, and my sister had reminded me to use up whatever ingredients I've bought before head back to Brisbane, so what to do, but some sort of cheese cake? So, I decided to make something to bring along to share with the girls.

Again, I reused the recipe for the cheesecake pops I made a few months back. It helps that the portions are pretty small, so it's safe to pop one, or two of these small morsels without feeling overwhelmed by the cheesy-ness if compared to a whole slice of cheesecake.

I had bought a medium bag of pistachios some time bag, and just got around to using it just only. So it features alot in the goodies I'm making recently. Here, I melted chocolate, coat the chilled cheesepops with chocolate and chopped pistachios. It struck me halfway through coating that some people might not like nuts, and I only had a few sticks left - explains the few non-nuts sticks.

I made creme brulee today. Will be talking about it with pictures in the next post. Together with the macarons that I am going to make (on Tuesday hopefully!), in an effort to clear the bits and pieces of baking ingredients in the pantry...
